Kaiseki-Sushi 7bis Rue André Lefebvre 011 33 1 45 54 48 60 Hisayuki Takeuchi was a chef in a French restaurant in Tokyo before deciding that he needed to add the skills of Escoffier to his repertoire. Now his spot in Paris, run by husband and wife team, Elisabeth and Hisayuki together, is so well known for unbelievably fresh omakase and bento that people travel across the world and schedule trips to find their cooking. Known to think of food as responsible for setting the harmony, rhythm and tempo of life, Takeuchi refuses to settle for anything less than perfectly fresh food, which he says can undermine your very life energy if it's synthetic or of poor quality. Since Hisa feels that a food experience should rival that of seeing great art in a museum, we feel pretty good placing our omakase experience in his hands. |
