Brian Matzkow has survived -- and flourished -- in all the trials thrown at a first time restaurateur. Food critics, a changing kitchen, a fickle audience. Such is the power of Sapa and its YSL-clad owner. Named for the town that inspired it, this jewel of a restaurant flew to the top of our list for being everything dining out should be. Classic ingredients (fish sauce, lemongrass, curry) in even the most ordinary Vietnamese dishes delighted. It remains a destination for both happy hour and proper dinner dates and fun groups. The dining room can be a touch loud so bring only the hippest of parents, but if they can brave it? We love the knish served cut up with dollops of cream and caviar and the traditional pho (delicately sliced beef which cooks as the soup is poured on.)
